Although I love eating out, I'm a huge fan of cooking and baking at home as well. It's generally healthier, cheaper, and a whole lotta messy fun. And you know how much I love messy fun.
I recently made these snack bars for my father-in-law, but ended up devouring most of them myself. What? They're good. And since they're a lot healthier and cheaper than the store-bought variety, I can both afford and fit into some stuff I'm dying to get my grubby little hands on. Ok, maybe I can't afford a lot of it quite yet. But I'm getting there, one home-made snack bar at a time.
Skinny Jeans Snack Bars:
In a bowl mix together: 2 cups oats; 1/2 cup whole wheat flour; 1/2 teaspoon salt; 1 teaspoon baking powder; 1/3 cup dried sour cherries; 1/3 cup chocolate chips
In a separate bowl mix together: 1/2 cup "wet" sweetener such as honey, maple syrup, or agave; 1/4 cup brown sugar; 3/4 cup peanut or almond butter
Mix wet into dry until fully incorporated. Press into 8 x 8 baking tray. It should look like so:
If your're really smart, you've doubled the recipe.
Bake at 375 for about 15-20 minutes, or until top is golden brown. Let cool before slicing into bars. Stare at the bars with creepy, lustful eyes before digging in.
